Instructions
Preparation
Preheat the oven to 180C/350F.
Grease a 9 x 13-inch baking dish and set it aside.
Thinly slice the zucchini into 1/8th inch thick pieces and sprinkle them with salt to draw out moisture. After 15 minutes, pat dry with a towel.
Cooking the Meat
In a non-stick pan, heat olive oil over medium heat. Add the ground beef and cook until no longer pink.
Stir in the tomato sauce and Italian seasoning, continuing to cook for an additional 5 minutes.
Mixing the Cheese
In a bowl, whisk together ricotta, shredded cheese, spinach, and egg until well combined.
Assembling
Spread half a cup of meat sauce in the baking dish. Add a layer of zucchini, followed by ½ cup of the ricotta mixture and ½ cup of mozzarella cheese.
Repeat the layering process until all ingredients have been used, finishing with mozzarella on top.
Baking
Cover the dish with foil and bake for 50 minutes, removing the foil after 30 minutes.
Allow it to rest for 10 minutes before serving.
