Ingredients

For the Potato Filling

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper

For Assembly

  • 8 small corn or flour tortillas
  • 1 cup pico de gallo
  • 1 whole avocado, sliced
  • to taste fresh cilantro for garnish

Instructions

Preparation

  • Start by boiling the diced potatoes in salted water until tender, which should take around 15 minutes. Once cooked, drain the potatoes and set them aside.
  • In a skillet, heat the olive oil over medium heat. Add the boiled potatoes along with cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes until the potatoes turn golden and slightly crispy.
  • Warm the tortillas in a separate pan or microwave until they are pliable.
  • Assemble the tacos by placing a generous amount of the potato mixture on each tortilla.
  • Top the tacos with pico de gallo, avocado slices, and a sprinkle of fresh cilantro.
  • Serve immediately and relish every bite!

Notes

For a twist, consider substituting the potatoes with sweet potatoes. You can also serve with salsa or vegan cheese for added flavor.
