Preparation
Start by boiling the diced potatoes in salted water until tender, which should take around 15 minutes. Once cooked, drain the potatoes and set them aside.
In a skillet, heat the olive oil over medium heat. Add the boiled potatoes along with cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes until the potatoes turn golden and slightly crispy.
Warm the tortillas in a separate pan or microwave until they are pliable.
Assemble the tacos by placing a generous amount of the potato mixture on each tortilla.
Top the tacos with pico de gallo, avocado slices, and a sprinkle of fresh cilantro.
