Filling

  • 4 cups fresh peaches, sliced Use ripe peaches for best flavor.
  • 1 cup brown sugar Adjust based on sweetness preference.
  • 1/2 teaspoon cinnamon Additional cinnamon can enhance the flavor.

Cobbler Topping

  • 1 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil or vegan butter, melted Use coconut oil for a richer flavor.
  • 1 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, toss the sliced peaches with brown sugar and cinnamon, then spread evenly in a baking dish.
  • In another bowl, combine the flour, oats, baking powder, and salt.
  • In a separate bowl, mix together the melted coconut oil, almond milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Pour the cobbler topping evenly over the peaches.

Baking

  • Bake for 30-35 minutes, or until the topping is golden brown.
  • Let cool for a few minutes before serving.

Notes

Serve with dairy-free vanilla ice cream, whipped coconut cream, or fresh berries. For storage, allow to cool completely, cover with plastic wrap or transfer to an airtight container. Can be stored in the fridge for up to five days or frozen for up to three months.
