Vegan Patty Melts

Ingredients

For the patties

  • 1 can Chickpeas (drained and mashed) Can use canned chickpeas for convenience.
  • 1 block Tofu (crumbled) Press tofu to remove excess moisture for better texture.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 2 tbsp Olive oil For cooking the patties.

For the assembly

  • 1 medium Onion (sliced) Caramelize for sweetness.
  • 4 slices Vegan cheese (optional) Use your favorite vegan cheese.
  • 4 slices Sandwich bread of choice Sourdough or rye for a twist.
  • 4 tbsp Dijon mustard For spreading on bread.

Instructions

Preparation

  • Mash the chickpeas in a bowl and mix in crumbled tofu, salt, and pepper. Shape the mixture into patties.

Cooking

  • Heat olive oil in a skillet over medium heat and cook the patties until they are golden brown on both sides, about 4-5 minutes each side.
  • In the same skillet, add sliced onions and caramelize them until they are sweet and golden, which should take around 8 minutes.

Assembly

  • Spread Dijon mustard on a slice of bread, add a cooked burger patty, caramelized onions, and cheese if desired.
  • Top with another slice of bread and grill the sandwich until the bread is toasted and the cheese melts.
  • Serve warm and enjoy your delicious vegan patty melts!

Notes

Store any leftover vegan patty melts in an airtight container in the refrigerator for 2-3 days. Reheat in a skillet or oven to maintain texture. Consider adding spices or experimenting with different types of bread for extra flavor.
