Instructions

Preparation

  • In a skillet, heat olive oil over medium heat and sauté the onions and garlic until they become translucent.
  • Add the finely chopped mushrooms and cook until softened.
  • In a large bowl, mash the black beans with a fork, leaving some chunks for added texture.
  • Combine the sautéed mixture, oats, walnuts, soy sauce, smoked paprika, salt, and pepper into the mashed beans. Mix everything well until fully combined.
  • Form the mixture into patties, ensuring they are packed tightly.

Cooking

  • In the same skillet, add a bit more olive oil and cook the patties on medium heat for 5-7 minutes on each side, until they’re golden brown and firm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the patties by placing them in a single layer on a baking sheet until firm, then transfer them to a freezer-safe bag. Reheat in a skillet or oven for the best texture.
