  • 1 cup sun-dried tomatoes, chopped

  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced Sauté until fragrant.
  • 2 tablespoons olive oil For sautéing garlic and tofu.
  • 1 teaspoon Italian seasoning

Preparation

  • Cook the gnocchi according to the package instructions; once done, set it aside.
  • In a large pan, heat the olive oil over medium heat and add minced garlic. Sauté until fragrant.
  • Add the cubed tofu to the pan, cooking until golden brown and crispy on all sides.
  • Stir in the sun-dried tomatoes, coconut milk, nutritional yeast, and Italian seasoning.
  • Let the sauce simmer until it thickens slightly, then season with salt and pepper to taste.
  • Toss the cooked gnocchi into the creamy sauce until well-coated.
  • Serve hot, garnished with fresh basil.
