Preparation
Cook the gnocchi according to the package instructions; once done, set it aside.
In a large pan, heat the olive oil over medium heat and add minced garlic. Sauté until fragrant.
Add the cubed tofu to the pan, cooking until golden brown and crispy on all sides.
Stir in the sun-dried tomatoes, coconut milk, nutritional yeast, and Italian seasoning.
Let the sauce simmer until it thickens slightly, then season with salt and pepper to taste.
Toss the cooked gnocchi into the creamy sauce until well-coated.
Serve hot, garnished with fresh basil.
