Warm to about 100°F (37°C).

maple syrup

coconut oil, melted

agave syrup (or more maple syrup)

Instructions
Preparation
In a small bowl, combine warm almond milk and yeast. Let it sit for 5-10 minutes until frothy.
In a separate large mixing bowl, combine flour, salt, and cinnamon.
Add the yeast mixture, melted coconut oil, maple syrup, and vanilla extract to the flour mixture.
Mix until a dough forms, then knead for 5-7 minutes until smooth and elastic.
Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
Roll out the dough on a floured surface into a rectangle.
Brush the surface with agave syrup and sprinkle with any optional fillings like chopped nuts or dried fruit.
Roll the dough tightly into a log and cut into equal pieces.
Place the buns in a greased baking dish and let rise for another 30 minutes.
Preheat your oven to 350°F (175°C) and bake the buns for 20-25 minutes until golden.
Allow to cool slightly before serving.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in a warm oven or microwave.
