Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup almond milk (or any plant-based milk) Warm to about 100°F (37°C).
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 packet active dry yeast
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup agave syrup (or more maple syrup) For brushing and optional sweetness.
  • 1/2 teaspoon cinnamon

Optional Fillings

  • chopped nuts or dried fruit Use as fillings for added texture.

Instructions

Preparation

  • In a small bowl, combine warm almond milk and yeast. Let it sit for 5-10 minutes until frothy.
  • In a separate large mixing bowl, combine flour, salt, and cinnamon.
  • Add the yeast mixture, melted coconut oil, maple syrup, and vanilla extract to the flour mixture.
  • Mix until a dough forms, then knead for 5-7 minutes until smooth and elastic.
  • Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
  • Roll out the dough on a floured surface into a rectangle.
  • Brush the surface with agave syrup and sprinkle with any optional fillings like chopped nuts or dried fruit.
  • Roll the dough tightly into a log and cut into equal pieces.
  • Place the buns in a greased baking dish and let rise for another 30 minutes.
  • Preheat your oven to 350°F (175°C) and bake the buns for 20-25 minutes until golden.
  • Allow to cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in a warm oven or microwave.
