  • 1 cup lentils (green or brown) Rinsed and cooked
  • 1 cup BBQ sauce Store-bought or homemade
  • 1 small onion (chopped)
  • 1 count bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil For sautéing
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 4 count burger buns For serving

Preparation

  • Rinse the lentils under cold water and cook them according to package instructions until tender.
  • In a large skillet, heat the olive oil over medium heat, then add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
  • Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
  • Add the cooked lentils along with the BBQ sauce to the skillet, mixing thoroughly until combined.
  • Allow everything to simmer for 5-10 minutes until heated through.
  • Season with salt and pepper to taste.
  • Spoon the lentil mixture onto burger buns and enjoy!

Notes

To enhance the flavor of your lentils, consider soaking them for an hour before cooking. Experimenting with different types of BBQ sauces will also give this dish a unique flavor profile based on your preferences. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months.
