Preparation
In a bowl, combine the coconut milk, chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt. Stir well to combine.
Let the mixture sit for about 5-10 minutes, then stir again to prevent clumping.
Refrigerate for at least 2 hours or overnight until it thickens to your desired consistency.
Before serving, layer with fresh raspberries on top for an added burst of flavor.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to five days. Flavors will improve over time.
