Ingredients

For the patties

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • to taste salt and pepper

For the yogurt sauce

  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice for yogurt sauce

Instructions

Preparation

  • In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  • Add the breadcrumbs, parsley, red onion, garlic, cumin, lemon zest, lemon juice, salt, and pepper. Mix well to combine the ingredients uniformly.
  • Form the chickpea mixture into small, round patties, about 1 inch thick.

Cooking

  • Heat oil in a skillet over medium heat until hot, but not smoking.
  • Carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crisp.
  • While the patties cook, prepare the yogurt sauce by mixing Greek yogurt with dill and lemon juice in a separate bowl.
  • Once cooked, remove the patties from the pan and let them drain on a paper towel. Serve warm with the yogurt sauce.

For the best dining experience, serve these chickpea patties alongside a refreshing Mediterranean salad or pair them with roasted vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on low heat in a skillet or toaster oven.
