  • 1.5 cups grated zucchini
  • 1 pound ground turkey can substitute with chicken or beef
  • 0.5 cups panko breadcrumbs use gluten-free breadcrumbs for gluten-free option
  • 0.5 teaspoon onion powder
  • 0.5 tablespoon Italian seasoning
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.5 cups grated parmesan cheese
  • 1 large egg

Instructions

Preparation

  • Preheat your oven to 400℉ (200℃).
  • Take the shredded zucchini and place it in the middle of a clean dish towel or a large piece of paper towel. Wrap it up and squeeze a few times to help drain out some of the excess moisture.
  • In a large bowl, combine the drained zucchini and the remaining ingredients. Mix until thoroughly combined, using clean hands or a spoon.
  • Gently roll the mixture into golf ball-sized portions.
  • Arrange the meatballs in a single layer on a large baking sheet.

Baking

  • Bake for 18-20 minutes, or until the meatballs are cooked through and golden brown.

Notes

These meatballs can be served over a bed of spaghetti, with roasted vegetables, or used in sub sandwiches or soft tacos. For extra flavor, consider adding fresh herbs like basil or parsley.
