Ingredients

Main ingredients

  • 1 lb ground turkey Lean ground turkey for lower fat content
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups chicken broth

Spices

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • to taste Salt and pepper Adjust according to preference

For cooking

  • 1 tbsp Olive oil For sautéing vegetables

Optional

  • Jalapeños or hot sauce For added heat

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion, bell pepper, and garlic, and sauté until soft, about 5 minutes.
  • Incorporate the ground turkey and cook until browned.

Cooking

  • Stir in the pumpkin puree, white beans, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for about 20-30 minutes, stirring occasionally.
  • Taste and adjust seasonings as needed, and serve hot, optionally topped with garnishes like cilantro or sour cream.

Notes

Serve with cornbread or over rice, and feel free to add your favorite toppings like sour cream, shredded cheese, or avocado. Store in an airtight container for up to 5 days in the fridge or up to 3 months in the freezer.
