Preheat your oven to 400°F (200°C).
In a bowl, combine the chopped spinach, crumbled feta, diced roasted red peppers, olive oil, garlic powder, and season with salt and pepper.
Make a slit in the side of each salmon fillet to create a pocket for stuffing.
