  • 4 pieces salmon fillets Choose the freshest salmon available.
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled Can substitute with cream cheese or goat cheese.
  • 1/2 cup roasted red peppers, diced
  • 2 tablespoons olive oil Use for both stuffing and drizzling.
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for serving lemon wedges To brighten the flavor.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the chopped spinach, crumbled feta, diced roasted red peppers, olive oil, garlic powder, and season with salt and pepper.
  • Make a slit in the side of each salmon fillet to create a pocket for stuffing.
  • Generously stuff each fillet with the spinach mixture prepared in step 2.
  • Place the stuffed salmon on a baking sheet and drizzle a little olive oil on top for added flavor.
  • Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve with lemon wedges to brighten the flavor.

Notes

Store any uneaten portions in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain moisture.
