  • 1 cup quinoa Rinse before cooking.
  • 2 cups water or vegetable broth
  • 1 15 oz can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 large red bell pepper, diced
  • 1 large avocado, sliced For topping.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • for garnish Fresh cilantro
  • for serving Lime wedges

Instructions

Preparation

  • Rinse the quinoa under cold water in a fine-mesh sieve.
  • In a medium saucepan, add the rinsed quinoa and the water or broth. Bring to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.

Mixing

  • In a large bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, cumin, chili powder, salt, and pepper.
  • Mix everything thoroughly and adjust the seasoning according to your preference.

Serving

  • Serve the mixture in bowls, topping it with sliced avocado and fresh cilantro.
  • For a refreshing twist, squeeze fresh lime juice over the bowl just before enjoying.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 4 days. You can reheat in the microwave or stovetop, adding a splash of water if needed to prevent drying out.
