Ingredients

Main Ingredients

  • 200 g rice noodles Can substitute with whole grain or vegetable noodles.
  • 3 tablespoons peanut butter Feel free to experiment with other nut butters.
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha Adjust based on heat preference.
  • 1 tablespoon lime juice Can substitute with lemon juice.
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated

Garnishes

  • to taste Chopped green onions
  • to taste Chopped cilantro Optional for garnish.

Instructions

Preparation

  • Cook the rice noodles according to the package instructions. Once they are tender, drain and set them aside.
  • In a mixing bowl, blend together the peanut butter, soy sauce, sriracha, lime juice, sesame oil, garlic, and ginger until smooth and well-combined.

Cooking

  • In a large skillet, introduce the cooked noodles and the peanut sauce over medium heat, tossing well to ensure each noodle is coated evenly with that rich sauce.
  • Serve the noodles hot, garnished with chopped green onions and cilantro if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. When reheating, add a splash of water or soy sauce to loosen the noodles and revive the sauce’s creaminess. For texture, consider adding roasted peanuts.
