Ingredients

Salad Base

  • 2 cups mixed greens any variety
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels fresh or canned
  • 1 cup black beans drained and rinsed
  • 1 each avocado, diced adds creaminess and healthy fats
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped

Dressing

  • 1 each lime, juiced freshly squeezed for best flavor
  • 3 tablespoons olive oil
  • 1 teaspoon cumin adds a nice flavor
  • to taste Salt and pepper for seasoning

Preparation

  • In a large bowl, combine the mixed greens, cherry tomatoes, corn, black beans, diced avocado, red onion, and cilantro.
  • In a separate bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to create the dressing.
  • Pour the dressing over the salad mixture and gently toss to combine.
  • Allow the salad to sit for about 10-15 minutes for the flavors to meld.
  • Serve alongside quesadillas or enjoy it on its own.

Notes

For an even more vibrant flavor, consider roasting your corn before adding it to the salad. You can customize the salad by adding diced roasted sweet potatoes or spicy jalapeƱos for an extra kick. Store leftovers in an airtight container in the refrigerator for 2-3 days without dressing to maintain freshness.
