  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 piece red bell pepper, diced
  • 1 piece avocado, sliced Omit if freezing for longer storage.
  • 1 cup cherry tomatoes, halved
  • 1 piece lime, juiced Essential for flavor enhancement.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Cooking Instructions

  • Start by grilling the chicken breasts until fully cooked. Slice them into strips once cooked.
  • Prepare the rice according to package instructions.
  • In a large mixing bowl, combine the cooked rice, black beans, corn, diced red bell pepper, and halved cherry tomatoes.
  • Season the mixture with lime juice, chili powder, cumin, salt, and pepper. Mix well.
  • Divide the rice mixture into bowls and top with sliced grilled chicken, avocado, and fresh cilantro.
  • Serve immediately or store in meal prep containers.

Notes

These bowls can be served warm or chilled. Consider adding sour cream or feta cheese for extra flavor. Store leftovers in airtight containers for up to three days, or freeze for up to three months (sans avocado).
