Ingredients

Cilantro lime crema

  • 1/4 cup cilantro Fresh, chopped.
  • 1/4 cup sour cream Can substitute with Greek yogurt.
  • 1 lime juiced For flavoring the crema.

Instructions

Cooking the Chicken

  • Season the chicken breasts with chipotle seasoning, salt, and pepper.
  • Cook the chicken on a grill or in a skillet until fully cooked, reaching an internal temperature of 165°F.

Sautéing Vegetables

  • In a separate pan, sauté the bell peppers and zucchini until tender and slightly caramelized.

Preparing Rice and Crema

  • Cook the rice according to package instructions.
  • In a bowl, mix the sour cream, chopped cilantro, and lime juice until well combined to create the cilantro lime crema.

Assembling the Bowl

  • Divide the cooked rice among bowls, layer with sautéed vegetables and sliced chicken.
  • Drizzle generously with the cilantro lime crema before serving.
