Ingredients

Base Ingredients

  • 1 cup quinoa Rinse before cooking to remove bitterness.
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1 tomato, diced
  • 1 cup shredded cheese (cheddar or your choice)

Seasoning

  • 2 tbsp olive oil For roasting the sweet potatoes.
  • salt and pepper to taste
  • optional spices (cumin, chili powder) For additional flavor.

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the sweet potato cubes with olive oil, salt, pepper, and any desired spices.
  • Spread them on a baking sheet and roast for 25-30 minutes until browned and tender.
  • While the sweet potatoes are roasting, cook quinoa according to package instructions.
  • Once the quinoa is cooked, fluff it with a fork and set it aside.

Assembly

  • In serving bowls, layer the quinoa, roasted sweet potatoes, black beans, corn, diced avocado, diced tomato, and top with shredded cheese.
  • Serve warm and enjoy your burrito bowl!

Notes

Consider adding a squeeze of lime or fresh herbs for enhanced flavor. Store leftovers in an airtight container in the refrigerator for up to four days. Reheat with a splash of water to keep quinoa moist.
