One Pot Broccoli Cheese Orzo

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups vegetable or chicken broth Use vegetable broth for a vegetarian option.
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

  • In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  • Pour in the orzo pasta and broth, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer.
  • Stir in the broccoli florets, cooking until the orzo is tender and most of the liquid has been absorbed, approximately 8-10 minutes.
  • Remove from heat and stir in the cheddar cheese and heavy cream until everything is melted and creamy.
  • Season with salt and pepper to taste, then serve warm.

Notes

For a vibrant presentation, consider garnishing with fresh herbs or a sprinkle of additional cheddar on top before serving. Store leftovers in an airtight container in the fridge for up to four days.
