  • 2 large sweet potatoes
  • 1 can chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, sliced
  • 1/2 cup plain yogurt
  • 1 lemon, juiced
  • 1 tablespoon fresh herbs (e.g., dill, parsley, or basil) Feel free to substitute with any fresh herbs available.
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the sweet potatoes in half lengthwise and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  • Roast the sweet potatoes in the oven for about 30-35 minutes, or until tender.

Filling Preparation

  • In a bowl, mix the chickpeas, feta cheese, and olives together.

Assembly

  • Once sweet potatoes are done, scoop a little out of the center to create a boat.
  • Fill the sweet potato halves with the chickpea mixture.
  • In another bowl, combine the yogurt, lemon juice, and herbs; stir to mix well.
  • Drizzle the lemon herb yogurt over the stuffed sweet potatoes.
  • Serve warm, and enjoy!

Notes

For the best experience, serve with a side of simple greens or a light salad. You can also drizzle some extra lemon juice over the top or sprinkle additional herbs to enhance the flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
