Dressing

  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano

Preparation

  • In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  • In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and toss gently to combine all the flavors.
  • Serve immediately or refrigerate for about 30 minutes to let the flavors meld together.

Notes

Store leftovers in an airtight container for up to three days. This salad doesn't freeze well. Allowing the salad to chill enhances the flavors.
