Ingredients

Salad Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled Can substitute with non-dairy option for a vegan version.
  • 1/4 cup fresh parsley, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

Preparation

  • In a large bowl, combine the drained chickpeas, black beans, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well-combined.
  • Pour the dressing over the salad mixture and toss gently to combine all the flavors.
  • Serve chilled or at room temperature for the best flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed within the first day or two. Consider adding the dressing right before serving to prevent sogginess.
