Ingredients

  • 1 medium Onion Diced
  • 1 cup Tomatoes Chopped
  • 2 medium Bell Peppers Diced
  • 2 tablespoons Olive oil For sautéing
  • 2 cloves Garlic Minced

Seasoning

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Italian seasoning

  • 1 cup Rice Or alternative grain (quinoa/couscous)

Preparation

  • Begin by heating olive oil in a pan over medium heat.
  • Add diced zucchini, onion, and bell peppers, then sauté until softened.
  • Toss in minced garlic and cook for an additional minute.
  • Stir in chopped tomatoes and season with salt, pepper, and Italian seasoning to taste.
  • Cook the rice according to package instructions.
  • In meal prep containers, assemble a base of rice topped with the sautéed veggie mixture.
  • Serve warm or store in meal prep containers for later.

Notes

Store bowls in airtight containers in the refrigerator for up to four days. You can freeze for longer storage. Reheat in the microwave until warmed through. Choose vibrant vegetables for best flavor; avoid overcrowding the pan when sautéing.
