Instructions

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Add the diced onion and sauté until it becomes translucent.
  • Stir in the minced garlic, ground cumin, and smoked paprika. Cook for another minute until fragrant.
  • Add the chickpeas and vegetable broth, bringing the mixture to a simmer. Allow it to cook for about 10 minutes.
  • Reduce the heat and stir in the coconut milk or heavy cream, letting it simmer for an additional 5 minutes.
  • Season with salt and pepper to taste before removing from heat.
  • Garnish with fresh parsley before serving and enjoy!
