  • 2 pieces boneless, skinless chicken breasts Ensure they are of even thickness for uniform cooking.

  • 1 cup cherry tomatoes, halved Can substitute sun-dried tomatoes for a more intense flavor.
  • 1 cup spinach, chopped Fresh spinach is preferred.
  • 1/2 cup heavy cream Provides creaminess to the sauce.
  • 1/2 cup grated Parmesan cheese Adds flavor to the sauce.

Instructions

Cooking

  • Heat the olive oil in a pan over medium heat.
  • Season the chicken breasts with salt and pepper and place them in the pan. Cook until golden brown on both sides, approximately 6-7 minutes per side, then remove the chicken and set it aside.
  • In the same pan, add the minced garlic and sauté for about one minute until aromatic.
  • Add the halved cherry tomatoes and cook for 2-3 minutes until they soften.
  • Stir in the chopped spinach and cook until wilted.
  • Lower the heat and add the heavy cream and grated Parmesan cheese, mixing until well combined.
  • Return the chicken to the pan, ensuring it's coated with the creamy sauce.
  • Garnish with fresh basil and serve immediately.

Notes

Best served with a side salad, sautéed zucchini, or over zoodles for a low-carb meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Avoid freezing due to the cream-based sauce.
