Instructions
Preparation
Cut the cauliflower into even-sized florets for uniform cooking.
Steam the florets over boiling water for 10-15 minutes, until tender.
Drain well and transfer the hot cauliflower to a food processor.
Add the butter and cream cheese to the processor.
Pour in the milk and season with salt, pepper, and garlic powder if using.
Blend until smooth and creamy, scraping down sides as needed.
Serving
Taste and adjust seasoning if needed.
Serve spooned into bowls and enjoy warm.
Notes
For a dairy-free version, replace butter with olive oil and cream cheese with cashew cream. To make it chunkier, omit cream cheese and pulse less.
