Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Use fresh chicken for best results.
  • 1/4 cup honey Can be swapped for maple syrup for a different sweetness.
  • 1/4 cup lime juice Fresh lime juice is preferred.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Mango Salsa

  • 1 piece ripe mango, diced Can be substituted with pineapple.
  • 1/2 piece red bell pepper, diced
  • 1/4 piece red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 piece lime

Instructions

Marinade Preparation

  • In a medium bowl, mix together the honey, lime juice, olive oil, garlic powder, salt, and pepper.
  • Add the chicken breasts and marinate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through.

Mango Salsa Preparation

  • While the chicken is cooking, prepare the mango salsa by combining the diced mango, red bell pepper, red onion, cilantro, and lime juice in a separate bowl.
  • Stir until well mixed.

Serving

  • Serve the grilled chicken topped with the fresh mango salsa.

Notes

For leftovers, cool completely, store in an airtight container in the fridge for 3-4 days, or freeze for up to three months. Reheat to 165°F (74°C).
