Ingredients

Main Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, diced
  • 2 cups mixed vegetables (e.g., corn, peas, carrots)
  • to taste salt and pepper
  • 1 can cream of mushroom soup (optional)

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Add the diced onions and cook until translucent.

Layering and Baking

  • In a baking dish, layer half of the sliced potatoes, followed by half of the cooked ground beef mixture, half of the mixed vegetables, and half of the cheese.
  • Repeat the layers with the remaining ingredients.
  • If using, pour the cream of mushroom soup over the top.
  • Cover the dish with foil and bake for 45 minutes.
  • Remove the foil and bake for another 15 minutes or until the cheese is bubbly and the potatoes are tender.
  • Let cool for a few minutes before serving.

Notes

Feel free to experiment with seasonal vegetables or your favorite types of cheese for a personalized touch. To keep leftovers fresh, store in an airtight container in the refrigerator for up to 3 days. This casserole can be frozen before or after baking. For a nutritious twist, consider using sweet potatoes or leftover roast beef instead of ground beef.
