  • 2 cups fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the chopped spinach, drained artichoke hearts, shredded chicken, Greek yogurt, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, salt, pepper, and optional red pepper flakes.
  • Mix until the ingredients are well incorporated.
  • Transfer the mixture to a greased casserole dish, spreading it evenly.
  • If you prefer a crunchy topping, sprinkle breadcrumbs over the mixture.
  • Bake for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
  • Allow it to cool for a few minutes before serving.

Notes

For an enhanced experience, pair with a fresh green salad or roasted vegetables. Leftovers can be stored in the refrigerator for up to three days and reheated in the microwave or oven.
