Herb-Marinated Feta with Roasted Grapes on Crostini

Ingredients

For the marinated feta

  • 8 ounces Feta cheese Crumbled or block feta
  • 2 tablespoons Olive oil For marinating and drizzling
  • 1 teaspoon Fresh herbs Thyme, rosemary, or oregano (chopped)
  • 1/4 teaspoon Salt To taste
  • 1/4 teaspoon Pepper To taste

For the roasted grapes

  • 2 cups Grapes Red or green, halved

For the crostini

  • 1 loaf Bread Italian or French, sliced
  • 1 tablespoon Olive oil For brushing on bread
  • 2 tablespoons Honey Optional for drizzling

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the grapes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast them in the oven for 15-20 minutes until softened and slightly caramelized.
  • In a mixing bowl, combine the feta cheese with chopped fresh herbs, olive oil, salt, and pepper. Let this mixture marinate for at least 30 minutes.
  • Slice your bread and brush each piece with olive oil. Toast the slices in the oven until they turn golden brown.
  • Top each crostini with a generous amount of the herb-marinated feta and a few roasted grapes. Drizzle with honey if desired.
  • Serve immediately.

Notes

Best served fresh. Store leftovers of marinated feta and roasted grapes separately in airtight containers. Enjoy within 2-3 days.
