Preparation
Preheat the oven to 375°F (190°C).
Slice the eggplants lengthwise into thin strips and brush both sides with olive oil. Bake in the oven for 20 minutes or until tender.
In a bowl, mix the ricotta cheese, chopped spinach, egg, salt, and pepper until well combined.
Spread a layer of marinara sauce on the bottom of a baking dish.
Assembly
Take a slice of eggplant, place a spoonful of the ricotta mixture at one end, and roll it up. Place seam-side down in the baking dish. Repeat with remaining eggplant and filling.
Pour the remaining marinara sauce over the top and sprinkle with mozzarella and Parmesan cheese.
