Ingredients

For the Dressing

  • ½ cup plain Greek yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons finely grated Parmesan
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon spicy Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small clove garlic, finely chopped
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

For the Salad

  • 2 cups shredded cooked chicken (I used rotisserie chicken)
  • ½ cup finely diced red onion
  • ½ cup finely diced celery
  • ¼ cup finely grated Parmesan
  • 2 tablespoons finely chopped parsley

Instructions

Prepare the Dressing

  • In a bowl, whisk together Greek yogurt, light mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, and garlic to create a smooth dressing.
  • Gradually whisk in the olive oil. If the dressing is too thick, add a little water until it’s pourable yet still creamy. Season with kosher salt and black pepper.

Prepare the Salad

  • In a large bowl, mix the shredded chicken, celery, red onion, parsley, and Parmesan.
  • Add about ½ to ⅔ of the dressing to the chicken mixture and toss until well coated. Adjust with more dressing to taste.

Serve the Salad

  • On slices of warm toasted sourdough bread, arrange the lettuce leaves and pile the chicken Caesar mixture on top.
  • Finish with shaved Parmesan and a sprinkling of black pepper before serving.

Notes

Store leftovers in the fridge for up to three days, keeping the dressing separate to prevent sogginess. Consider adding toasted walnuts or almonds for crunch.
