Preparation
Preheat the oven to 375°F (190°C).
Cut the zucchini in half lengthwise and scoop out the insides to create boats. Drizzle with olive oil and season with salt and pepper.
Cooking
In a skillet, sauté the chopped onion and garlic until translucent.
Add the ground beef and cook until browned, draining any excess fat.
Stir in the marinara sauce and Italian seasoning, cooking for an additional 2-3 minutes.
Fill each zucchini boat with the beef mixture and top with shredded cheese.
Place the zucchini boats in a baking dish and cover with foil. Bake for 25 minutes.
Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serve hot and enjoy!
Notes
For presentation, sprinkle fresh herbs like basil or parsley on top just before serving. Pair with a crisp salad or garlic bread.
