Ingredients

For the zucchini boats

  • 4 medium medium zucchinis Halved and scooped out

For the filling

  • 1 lb ground beef Cooked until browned
  • 1 small onion, chopped Sautéed until translucent
  • 2 cloves garlic, minced Sautéed with onion
  • 1 cup marinara sauce Can use higher quality marinara for better flavor
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup shredded cheese Mozzarella or cheddar, for topping
  • for drizzling Olive oil To enhance flavors

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchini in half lengthwise and scoop out the insides to create boats. Drizzle with olive oil and season with salt and pepper.

Cooking

  • In a skillet, sauté the chopped onion and garlic until translucent.
  • Add the ground beef and cook until browned, draining any excess fat.
  • Stir in the marinara sauce and Italian seasoning, cooking for an additional 2-3 minutes.
  • Fill each zucchini boat with the beef mixture and top with shredded cheese.
  • Place the zucchini boats in a baking dish and cover with foil. Bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serving

  • Serve hot and enjoy!

Notes

For presentation, sprinkle fresh herbs like basil or parsley on top just before serving. Pair with a crisp salad or garlic bread.
