Ingredients

For the marinade

  • 1 lb boneless, skinless chicken breast filets Use fresh chicken for best results.
  • 1 clove garlic, minced Adds flavor to the marinade.
  • 1/2 tsp chipotle powder For a smoky flavor.
  • 1/2 tsp cumin powder Enhances the Mexican flavor profile.
  • 1/2 tsp Mexican oregano A must for traditional taste.
  • 1/2 tsp sea salt Balances flavors.
  • 1/2 tsp freshly cracked black pepper For seasoning.
  • 2 tsp olive oil (for marinating) Oil is essential for marinating.
  • Juice of 1 lime lime Adds acidity and brightness.

For sautéing

  • 1 small onion, sliced Add sweetness and texture.
  • 1 medium bell pepper, sliced Use colorful bell peppers for diversity.
  • 1 tsp olive oil (for sautéing) To cook the vegetables.
  • 2 tsp worcestershire sauce Enhances flavor.

For serving

  • 8 pieces warm corn tortillas Essential for serving fajitas.
  • Guacamole or sliced avocado Popular topping choice.
  • Plain Greek yogurt or sour cream Adds creaminess.
  • Salsa or pico For a fresh kick.
  • Shredded cheese Optional, for added richness.

Instructions

Preparation

  • In a large bowl, mix together the garlic, chipotle powder, cumin, oregano, salt, pepper, lime juice, and 2 tsp of olive oil.
  • Add the chicken to the marinade and stir well to coat. Allow the chicken to marinate in the refrigerator for at least 30 minutes.

Cooking

  • Preheat your grill to high heat and reduce the heat to low just before grilling.
  • Place the marinated chicken on the grill and cook for about 5-7 minutes per side or until nicely charred and the internal temperature reaches 165°F.
  • While the chicken is cooking, prepare the peppers and onions. In a cast iron skillet on the grill, add 1 tsp of olive oil along with the sliced peppers and onions. Sauté until tender, stirring occasionally. About halfway through cooking, drizzle in the Worcestershire sauce.
  • Once the chicken is done, remove it from the grill, slice it thinly, and add it to the skillet with the peppers and onions.

Serving

  • Serve your fajitas with warm corn tortillas and a selection of toppings like guacamole, sour cream, salsa, and shredded cheese.

Notes

For the best flavor, let the chicken marinate for several hours or overnight if time allows. You can also customize the vegetable mix with zucchini or mushrooms.
