Ingredients

For the meatballs

  • 1 lb ground beef or lamb Feel free to substitute with ground turkey for a lighter option.
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the bowl

  • 2 cups cooked couscous Can substitute with quinoa for extra nutrition.
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup tzatziki sauce

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground meat, breadcrumbs, chopped parsley, minced garlic, oregano, salt, and black pepper. Mix well and form into meatballs.

Cooking

  • Place the meatballs on a baking sheet and bake for 20-25 minutes or until they are fully cooked.

Serving

  • To serve, layer cooked couscous, the baked meatballs, diced cucumbers, halved cherry tomatoes, and diced red onions in serving bowls.
  • Drizzle generously with tzatziki sauce before enjoying your vibrant Greek Meatball Bowl!

Notes

Pair with warm pita bread or a mixed greens salad for a complete meal. For added brightness, serve with a splash of lemon juice or a sprinkle of feta.
