  • 1 cup chicken broth
  • 1 cup corn, frozen or canned
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 1 cup Greek yogurt or sour cream Optional, choose based on preference
  • Salt and pepper to taste

Instructions

Preparation

  • In a slow cooker or pot over medium heat, add olive oil and sauté the onion and garlic until translucent.

Combine Ingredients

  • Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.

Cooking

  • If using a slow cooker, set it on low for 6-7 hours or high for 3-4 hours. For a stovetop version, bring to a simmer and cook for about 20-30 minutes.

Finish and Serve

  • Stir in Greek yogurt or sour cream right before serving.
  • Top with optional toppings like cilantro, diced avocado, and lime wedges for added flavor.
