  • 1 can white beans, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 2 cups vegetable broth
  • 1 cup spinach or other greens Kale or Swiss chard can be used as alternatives.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste

  • In a pot, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until translucent.
  • Add the halved cherry tomatoes and cook for a few minutes until they soften.
  • Stir in the white beans, vegetable broth, spinach, dried basil, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and allow to simmer for about 10 minutes.
  • Serve the stew hot, garnished with additional basil if desired.

Notes

For added depth of flavor, consider adding a dash of paprika or red pepper flakes. You can also purée a portion of the stew for a creamier texture using an immersion blender. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
