  • 6 oz Pancetta, diced Can be substituted with crispy bacon.
  • 1 teaspoon Black pepper Adjust according to taste.
  • 1 teaspoon Salt For seasoning.
  • 1 tablespoon Olive oil For cooking pancetta.
  • 2 cloves Garlic, minced Optional, but recommended for added flavor.

Preparation

  • Cook the cheese-stuffed tortellini according to package instructions. Drain and set aside.
  • In a pan, cook the pancetta in olive oil over medium heat until crispy. If using, add minced garlic and cook until fragrant.
  • In a bowl, whisk together the eggs, grated Parmesan, black pepper, and salt.

Combining Ingredients

  • Combine the cooked tortellini with the pancetta in the pan, then remove from heat.
  • Quickly pour the egg mixture over the hot tortellini while stirring to create a creamy sauce.

Serving

  • Serve immediately, topped with extra Parmesan and black pepper.

Notes

For leftovers, store in an airtight container in the refrigerator for up to three days. Reheat gently in a pan, adding a splash of cream or broth if necessary to restore creaminess. Consider adding seasonal vegetables or spices for variation.
