Instructions
Cooking the Pasta
Begin by cooking the pasta according to the package instructions. Once cooked, drain and set aside.
Making the Sauce
In a skillet, heat the olive oil over medium heat.
Add the minced garlic and sauté until it becomes fragrant, about 1 minute.
Stir in the sun-dried tomatoes and cook for an additional 2-3 minutes.
Pour in the coconut cream and vegetable broth, stirring well to combine.
Add the nutritional yeast, then season with salt and pepper to taste.
Let the sauce simmer for about 5 minutes until it thickens slightly.
Toss the drained pasta in the sauce until it’s evenly coated.
Serve hot, garnished with fresh basil.
Notes
To keep leftovers fresh, store any uneaten pasta in an airtight container in the fridge for up to three days. If freezing, use a freezer-safe container and consume within three months. Reheat to a safe temperature of 165°F (74°C).
