  • 1 cup 1 cup sun-dried tomatoes (packed in oil, drained and chopped) Fresh sun-dried tomatoes can enhance the flavor.
  • 1 cup 1 cup coconut cream Can substitute with other dairy alternatives.
  • 2 cloves 2 cloves garlic (minced) Garlic adds aromatic flavor.
  • 1/2 cup 1/2 cup vegetable broth Can use low-sodium broth.
  • 1/4 cup 1/4 cup nutritional yeast For a cheesy flavor.
  • 1 tablespoon 1 tablespoon olive oil For sautéing.
  • to taste Salt and pepper Adjust seasoning according to preference.
  • to garnish Fresh basil For garnishing before serving.

Instructions

Cooking the Pasta

  • Begin by cooking the pasta according to the package instructions. Once cooked, drain and set aside.

Making the Sauce

  • In a skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté until it becomes fragrant, about 1 minute.
  • Stir in the sun-dried tomatoes and cook for an additional 2-3 minutes.
  • Pour in the coconut cream and vegetable broth, stirring well to combine.
  • Add the nutritional yeast, then season with salt and pepper to taste.
  • Let the sauce simmer for about 5 minutes until it thickens slightly.
  • Toss the drained pasta in the sauce until it’s evenly coated.
  • Serve hot, garnished with fresh basil.

Notes

To keep leftovers fresh, store any uneaten pasta in an airtight container in the fridge for up to three days. If freezing, use a freezer-safe container and consume within three months. Reheat to a safe temperature of 165°F (74°C).
