  • 6-8 thighs boneless, skinless chicken thighs (2-3 pounds)
  • Salt and pepper (to taste)
  • 2 tbsp olive oil (divided)
  • 2 tsp fresh minced garlic (3-4 cloves)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups chopped spinach
  • 2 tbsp butter
  • 2 tbsp flour (use almond flour for Keto version)

Preparation

  • Preheat your oven to 375°F with the rack positioned in the center. Meanwhile, spray a large baking sheet with cooking spray and set it aside.
  • Generously season both sides of the chicken thighs with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken thighs in a single layer and cook for about 3-4 minutes per side until they develop a slight browning. Remove the chicken from the skillet and place it on the prepared baking sheet.
  • Transfer the baking sheet with the chicken to the preheated oven and cook for 20-30 minutes until the chicken is cooked through.

Cooking the Sauce

  • In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Add the minced garlic, stirring for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring it to a simmer, scraping up any browned bits for extra flavor. Slowly whisk in the heavy cream.
  • In a small saucepan, melt the butter and add the flour, stirring to combine until it forms a thick paste.
  • Transfer the flour mixture into the skillet with the broth and cream, whisking until the sauce thickens—this should happen immediately.
  • Stir in the chopped spinach along with salt and pepper to taste. Keep it on low heat, stirring occasionally until the chicken is ready.
  • Once the chicken is done, pour the creamy spinach sauce over it and serve immediately.

Notes

To store leftovers, keep Creamy Garlic Spinach Chicken Thighs in an airtight container in the refrigerator for about 3-4 days. When reheating, do so gently to avoid overheating. You can also freeze this dish for longer storage.
