  • 3/4 cup mayonnaise For a lighter flavor, use mayonnaise made with olive oil or avocado oil.
  • 3 cloves garlic, finely minced or grated Finely grated garlic distributes more evenly for a smooth texture.
  • 1 tablespoon lemon juice Use fresh lemon juice for the best flavor.
  • 1 tablespoon anchovy paste Omit for a non-anchovy version.
  • 1 tablespoon Worcestershire sauce Provides savory depth.
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1/2 cup finely grated Parmigiano Reggiano Optional for a thicker dressing, dip, or spread.

Instructions

Preparation

  • Add the mayonnaise, garlic, lemon juice, anchovy paste, Worcestershire sauce, Dijon mustard, and black pepper to a small bowl.
  • Stir thoroughly until the mixture is smooth and evenly combined.
  • If you want a thicker dressing or plan to use it as a dip or spread, fold in the finely grated Parmigiano Reggiano.
  • Cover the bowl and refrigerate the dressing for approximately one hour.
  • Stir once more before serving. Toss with chopped romaine, or spoon it over vegetables, chicken, or sandwiches.

Notes

Use the dressing within 5 to 7 days for the best flavor. Store in an airtight container in the refrigerator. It is not a good candidate for freezing.
