Ingredients

  • 8 ounces bow tie pasta Cook according to package instructions.
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons vinegar (balsamic or red wine)

Instructions

Cooking the Pasta

  • Cook the bow tie pasta according to package instructions until al dente. Drain and set aside to cool.

Mixing Ingredients

  • In a large bowl, combine the cooled pasta with cherry tomatoes, bell peppers, cucumber, red onion, olives, and parsley.
  • In a separate small bowl, whisk together the olive oil, vinegar, salt, and pepper until well-blended.
