Ingredients

Main Ingredients

  • 1 lb Shrimp Peeled and deveined
  • 4 cups Leafy greens e.g., spinach, kale, or mixed greens
  • 1 large Avocado Diced
  • 1/4 cup Citrus juice Freshly squeezed from oranges or grapefruits
  • 2 tbsp Olive oil For drizzling
  • 1 pinch Salt To taste
  • 1 pinch Pepper To taste

Optional Additions

  • 1/2 cup Nuts or seeds For added crunch
  • 1/2 cup Cheese Optional, e.g., feta
  • 1 cup Other vegetables e.g., bell peppers, cucumber

Instructions

Cooking Shrimp

  • Heat a pan on medium-high heat.
  • Add the shrimp and cook for 2-3 minutes on each side until pink and opaque.
  • Season the shrimp with salt and pepper while cooking.

Assembling Salad

  • Place the leafy greens in a large serving bowl.
  • Once the shrimp are cooked, let them cool slightly before adding them to the bowl.
  • Dice the avocado and add it to the bowl.
  • Squeeze fresh citrus juice over the salad and drizzle with olive oil.
  • Gently toss until all ingredients are well combined.
  • Mix in any optional fixings if desired.

Notes

Store leftovers in an airtight container in the fridge and consume within 1-2 days for best quality. Use separate containers for meal prep to maintain texture.
