Ingredients

Main ingredients

  • 1 can chickpeas (garbanzo beans), drained and rinsed
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 red onion, chopped (optional) can omit if preferred

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Garnish

  • to taste Fresh herbs (parsley or cilantro), for garnish optional

Instructions

Preparation

  • In a large bowl, combine the chickpeas, cucumber, tomatoes, avocado, feta cheese, and red onion if using.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well blended.
  • Pour the dressing over the salad and toss gently to combine all the ingredients.
  • Garnish with fresh herbs if desired.
  • Serve immediately, or chill in the refrigerator before serving to allow the flavors to blend.

Notes

Store in an airtight container in the refrigerator for up to three days. Best consumed within a day if avocado is included, as it may brown. Dressing can be prepared in advance and stored separately.
