  • 1 can chickpeas, drained and rinsed
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cucumber diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 limes, juiced
  • Salt and pepper to taste
  • Tostadas or tortilla chips, for serving

  • In a mixing bowl, combine the drained and rinsed chickpeas with the diced cherry tomatoes, finely chopped red onion, diced cucumber, chopped cilantro, and minced jalapeño.
  • Squeeze the fresh lime juice over the mixture and stir gently to combine all the flavors.
  • Season with salt and pepper to taste, adjusting as needed.
  • Allow the mixture to marinate for at least 10 minutes to let the flavors develop.
  • Serve it on tostadas or with tortilla chips for the perfect crunch.

Chickpea ceviche can be enjoyed on tostadas or with tortilla chips. It pairs beautifully with avocado slices or grilled vegetables. For the best flavor, serve chilled and store leftovers in an airtight container for up to 3 days, but consume within 2 days for optimum freshness.
