Ingredients

Main Ingredients

  • 8 oz egg noodles or lo mein noodles Can also use rice noodles or zucchini noodles.
  • 1 lb chicken breast, sliced Can marinate briefly in soy sauce for added flavor.
  • 2 cups mixed vegetables (like bell peppers, carrots, and snap peas) Feel free to experiment with seasonal vegetables.

Sauces and Seasonings

  • 3 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil For stir-frying.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon ginger, minced
  • to taste salt and pepper
  • for garnish green onions Adds color and crunch.

Instructions

Preparation

  • Cook the egg noodles according to package instructions. Once done, drain and set them aside.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  • Introduce the sliced chicken to the pan, cooking until no longer pink, approximately 5-7 minutes.
  • Next, toss in the mixed vegetables and stir-fry for an additional 2-3 minutes until they become tender.
  • Pour in the hoisin sauce and soy sauce, mixing everything well to coat the chicken and veggies.
  • Finally, add the cooked noodles to the skillet and toss everything together until you achieve a delicious mix.
  • Season with salt and pepper to taste before plating.

Serving

  • Serve hot, garnished with green onions.

Notes

If you have leftovers, store in an airtight container in the fridge for 3-4 days and reheat in a skillet or microwave. For optimal flavor, consider marinating the chicken briefly in soy sauce before cooking. You can also try mixing different proteins or sauces for unique flavors.
