Ingredients

Chicken and Vegetables

  • 2 pieces boneless, skinless chicken breasts
  • 1 piece bell pepper (red or green), sliced
  • 1 piece onion, sliced
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil

Base and Toppings

  • 2 cups cooked brown rice or quinoa
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the sliced chicken, bell pepper, and onion to the skillet.
  • Sprinkle with fajita seasoning and cook until the chicken is cooked through and the vegetables are tender, about 6-8 minutes.
  • Remove the skillet from heat.

Assembly

  • In meal prep containers, layer in the cooked brown rice or quinoa.
  • Add the chicken and vegetable mixture on top.
  • Finish by topping with rinsed black beans and corn.
  • Optionally, garnish with fresh cilantro and include lime wedges for serving.

Notes

Store in airtight containers in the refrigerator for up to five days. Reheat in the microwave when ready to eat. Marinate chicken in fajita seasoning for robust flavor and try alternative vegetables for variety.
