Ingredients

Chicken and Seasoning

  • 1 lb chicken breast Cook thoroughly before slicing.
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Bowls Assembly

  • 2 cups cooked rice Use preferred type of rice.
  • 1 cup bell peppers, sliced
  • 1 cup corn
  • 1 cup black beans, drained and rinsed Can substitute with other beans.
  • 1 each avocado, diced
  • 1 cup salsa Use your favorite type.
  • Fresh cilantro for garnish

Preparation

  • Heat a skillet over medium heat and add the chicken breast. Cook until no longer pink in the center, seasoning with cumin, chili powder, salt, and pepper.
  • Once the chicken is done, remove it from the skillet, let it cool slightly, then slice it into strips.

Assembly

  • In individual serving bowls, begin by adding a hearty layer of cooked rice.
  • Next, arrange the sliced chicken on top, followed by the sliced bell peppers, corn, and black beans.
  • Add diced avocado and generous spoonfuls of salsa to each bowl.
  • Finally, sprinkle fresh cilantro on top and serve immediately.

Notes

For added flavor, marinate the chicken before cooking. Use rotisserie chicken to save time. Experiment with additional toppings like crushed tortilla chips or shredded cheese.
