Preparation
Slice the cucumber into thin strips using a mandoline or a sharp knife.
In a bowl, blend the shredded chicken, buffalo sauce, cream cheese, diced celery, chopped green onions, and a pinch of salt and pepper until well combined.
Assembly
Take a slice of cucumber and lay it flat. Place a spoonful of the buffalo chicken mixture at one end and roll it up tightly.
