  • 1 unit cucumber Sliced into thin strips
  • 1 cup shredded cooked chicken
  • 1/3 cup buffalo sauce Adjust to taste
  • 1/4 cup cream cheese, softened
  • 1/4 cup diced celery
  • 1 tablespoon chopped green onions
  • to taste Salt and pepper

  • to taste Ranch or blue cheese dressing For dipping

Instructions

Preparation

  • Slice the cucumber into thin strips using a mandoline or a sharp knife.
  • In a bowl, blend the shredded chicken, buffalo sauce, cream cheese, diced celery, chopped green onions, and a pinch of salt and pepper until well combined.

Assembly

  • Take a slice of cucumber and lay it flat. Place a spoonful of the buffalo chicken mixture at one end and roll it up tightly.
  • Keep rolling until all filling is wrapped in cucumber strips, repeating the process with remaining ingredients.
  • Serve immediately with ranch or blue cheese dressing for dipping, if desired.

Notes

If you have leftovers, store them in an air-tight container in the refrigerator for optimal freshness. Best eaten within a couple of days, as freezing is not recommended due to texture changes in cucumber.
